Description

Carrot Raisin Salad is a sweet and creamy classic made with shredded carrots, raisins, and a simple dressing. A refreshing side dish perfect for picnics and potlucks.


Ingredients

4 cups carrots finely shredded

3/4 cup raisins

1/2 cup mayonnaise

2 tablespoons granulated sugar

1 tablespoon lemon juice

1/4 teaspoon salt

1/4 cup chopped pineapple optional

1/4 cup chopped walnuts or pecans optional


Instructions

1. Peel and finely shred carrots.

2. Place shredded carrots in a large bowl.

3. Add raisins to the bowl.

4. Whisk mayonnaise, sugar, lemon juice, and salt in a small bowl.

5. Pour dressing over carrot mixture.

6. Stir until evenly coated.

7. Fold in pineapple or nuts if using.

8. Refrigerate at least 30 minutes before serving.

Notes

Freshly shredded carrots provide the best texture.

Greek yogurt can replace mayonnaise for a lighter version.

Add pineapple or apples for extra sweetness.
