Classic Carrot Cake with Cream Cheese Frosting that is moist, perfectly spiced, and easy to make at home.


Ingredients

2 teaspoons baking soda

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

4 large eggs

1 1/4 cups granulated sugar

1/2 cup brown sugar

1 cup vegetable oil

2 teaspoons vanilla extract

3 cups grated carrots

3/4 cup chopped nuts (optional)

Cream Cheese Frosting

16 ounces cream cheese

1/2 cup unsalted butter

4 cups powdered sugar

2 teaspoons vanilla extract


Instructions

1. Preheat oven and prepare cake pans

2. Mix dry ingredients in a bowl

3. Beat eggs, sugars, oil, and vanilla

4. Combine wet and dry ingredients

5. Fold in carrots and nuts

6. Divide batter between pans

7. Bake until set

8. Cool completely

9. Prepare frosting
