Ingredients
1 sheet puff pastry thawed
1 lb carrots peeled and sliced thin
3 tablespoons butter
3 tablespoons brown sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons cream cheese or mascarpone optional
Fresh thyme or parsley for garnish optional
Instructions
1. Preheat oven to 400°F (200°C) and line baking sheet.
2. Roll puff pastry on floured surface to fit tart pan or sheet.
3. Optional: Spread thin layer of cream cheese or mascarpone.
4. Melt butter in skillet over medium heat.
5. Add carrots, brown sugar, salt, and pepper; cook 8-10 minutes until tender and caramelized.
6. Stir in vanilla extract and remove from heat.
7. Arrange carrots evenly over puff pastry.
8. Fold pastry edges slightly over carrots to create border.
9. Bake 20-25 minutes until pastry is golden.
10. Cool slightly and garnish with thyme or parsley.
11. Slice and serve warm or at room temperature.
