Ingredients
Potatoes, peeled and diced
Onion, finely chopped
Bell pepper, diced
Celery, diced
Garlic, minced
Olive oil
Cajun seasoning
Smoked paprika
Chicken or vegetable broth
Heavy cream or coconut milk
Salt
Black pepper
Green onions, for garnish
Optional: shredded cheese or cooked shrimp
Instructions
1. Heat olive oil in a large pot over medium heat. Sauté onions, bell peppers, celery, and garlic until softened.
2. Stir in Cajun seasoning, smoked paprika, salt, and black pepper. Add diced potatoes and toss to coat.
3. Pour in chicken or vegetable broth and bring to a boil. Reduce heat and simmer 20–25 minutes until potatoes are tender.
4. Use an immersion blender to partially blend the soup, leaving some chunks for texture. Stir in heavy cream or coconut milk.
5. Taste and adjust seasoning. Serve hot, garnished with green onions and optional cheese or shrimp.

Make it vegan with vegetable broth and coconut milk.
Add cooked chicken or shrimp for protein.
Increase Cajun seasoning for extra heat.
