Description
Sweet, tender, and perfectly caramelized carrots roasted with brown sugar and olive oil for a delicious side dish.
Ingredients
1 pound carrots, peeled and cut into sticks
2 tablespoons olive oil
2 tablespoons brown sugar
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon fresh thyme leaves (optional)
Optional: 1 teaspoon balsamic vinegar
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Peel carrots and cut into uniform sticks.
3. In a large bowl, toss carrots with olive oil, brown sugar, salt, pepper, thyme, and optional balsamic vinegar.
4. Spread carrots in a single layer on the prepared baking sheet. Roast for 20–25 minutes, stirring halfway, until tender and caramelized.
5. Remove from oven, allow to cool slightly, and serve.
Notes
Cut carrots into similar sizes for even roasting.
Add a pinch of cinnamon or nutmeg for warm flavor.
Sprinkle fresh herbs like parsley or rosemary before serving.
Drizzle with maple syrup instead of brown sugar for variation.
Roast ahead of time and reheat in oven for 5–7 minutes.
