Description

Creamy, cheesy, and comforting, this Broccoli Cheese Rice Casserole is the perfect side dish for family dinners or holidays.


Ingredients

2 cups cooked rice

3 cups broccoli florets, steamed

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

2 cups shredded cheddar cheese, divided

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup crushed Ritz crackers or breadcrumbs (optional)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a large bowl, combine cooked rice, broccoli, soup, sour cream, 1 1/2 cups cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.

3. Spread mixture evenly into the baking dish.

4. Top with remaining cheese and optional cracker crumbs.

5. Bake for 25–30 minutes until bubbly and golden.

Notes

Make ahead: Assemble, cover, and refrigerate up to 24 hours before baking.
