Ingredients
2 tablespoons butter
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1/4 cup all-purpose flour
3 cups broccoli florets, finely chopped
2 cups vegetable broth
1 cup whole milk
1 cup heavy cream
2 cups sharp cheddar cheese, shredded
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
Optional topping: extra cheddar cheese or croutons
Instructions
1. Melt butter and olive oil in a large pot.
2. Cook onion until soft; add garlic and cook briefly.
3. Stir in flour and cook 1 minute.
4. Whisk in vegetable broth until smooth.
5. Add broccoli, milk, and cream; simmer until broccoli is tender.
6. Blend until smooth or partially chunky.
7. Reduce heat and stir in cheddar cheese.
8. Season and serve warm.
Notes
Use freshly shredded cheddar for best melting.
Blend fully or partially depending on texture preference.
Avoid boiling after adding cheese.
