Description

Blueberry Popovers are airy, golden, and filled with fresh blueberries for a light breakfast treat.


Ingredients

1 cup all-purpose flour

1/2 teaspoon salt

1 tablespoon sugar

2 large eggs

1 cup milk

2 tablespoons unsalted butter, melted

1/2 teaspoon vanilla extract

1/2 cup fresh or frozen blueberries


Instructions

1. Preheat oven to 425°F and grease a popover pan.

2. Whisk together flour, salt, and sugar.

3. Whisk eggs, milk, butter, and vanilla in separate bowl.

4. Gradually combine wet and dry ingredients until smooth.

5. Fold in blueberries gently.

6. Pour batter into cups 2/3 full.

7. Bake 15 minutes at 425°F, then 15-20 minutes at 350°F until golden.

8. Serve immediately.

Notes

Frozen blueberries work well.

Add lemon zest for extra brightness.

Dust with powdered sugar or drizzle honey before serving.

Avoid opening oven door during first 15 minutes.
