Soft, nutty, and fruity, these Blackberry Pistachio Bars feature juicy blackberries and a buttery pistachio crust for a colorful dessert or snack that’s perfect for any occasion.
Ingredients
1 cup fresh blackberries
1 tablespoon lemon juice
1 tablespoon cornstarch
1/4 cup sugar
1 cup all-purpose flour
1/2 cup pistachios finely chopped
1/3 cup sugar
1/4 teaspoon salt
1/2 cup unsalted butter melted
1/2 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
2. Mix blackberries, lemon juice, cornstarch, and 1/4 cup sugar; set aside.
3. Combine flour, chopped pistachios, 1/3 cup sugar, and salt in a bowl.
4. Add melted butter and vanilla; stir until crumbly.
5. Press two-thirds of the mixture into the baking pan to form the crust.
6. Spread blackberry mixture evenly over the crust.
7. Sprinkle remaining crumble on top.
8. Bake 28–32 minutes until golden and bubbly.
9. Cool completely before cutting into bars.
Notes
Add extra pistachios on top for crunch.
Substitute blueberries or raspberries if desired.
Chill bars before cutting for cleaner slices.
