Blackberry Cheesecake Brownies are the ultimate dessert fusion—chewy chocolate base, creamy cheesecake, and a vibrant swirl of real blackberry sauce. A beautiful and delicious treat for any occasion.
Ingredients
### For the Blackberry Swirl:
3 ounces fresh or frozen blackberries
1 tablespoon granulated sugar
### For the Brownie Layer:
4 tablespoons unsalted butter, diced
1/2 cup + 1 tablespoon granulated sugar
6 tablespoons unsweetened cocoa powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 large egg
1/4 cup all-purpose flour
### For the Cheesecake Layer:
6 ounces cream cheese, softened
1 large egg white
3 tablespoons granulated sugar
1/4 teaspoon vanilla extract
Instructions
1. In a small saucepan, combine blackberries and sugar. Crush lightly and simmer on medium heat for 10 minutes. Strain and set aside.
2. In a microwave-safe bowl, melt butter, sugar, and cocoa for 30 seconds. Stir, repeat once, and let cool.
3. Stir in salt and vanilla. Add the egg and mix well.
4. Add flour and stir vigorously for at least 50 strokes.
5. Line a 9x5x3” loaf pan with parchment paper. Spread brownie batter evenly.
6. In a separate bowl, beat cream cheese, egg white, sugar, and vanilla until smooth.
7. Pour cheesecake mixture over brownie base. Drizzle blackberry sauce on top in thin lines.
8. Use a toothpick to gently swirl sauce into cheesecake layer.
9. Bake at 325°F (163°C) for 45 minutes until edges are golden and center is set.
10. Cool completely at room temperature, then chill before slicing.
Notes
Chilling the brownies before slicing gives you clean layers and enhances the flavor. These brownies also freeze well for up to 2 months when individually wrapped.
