Description
Thick, rich beef chili made with beans, tomatoes, and warm spices. Perfect for cozy dinners and meal prep.
Ingredients
2 tablespoons olive oil
1 lb ground beef
1 medium onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
2 tablespoons tomato paste
1 can 14.5 oz diced tomatoes
1 can 15 oz crushed tomatoes
1 can 15 oz kidney beans, drained and rinsed
1 can 15 oz black beans, drained and rinsed
1 cup beef broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
Optional toppings: shredded cheese, sour cream, green onions
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Cook ground beef until browned; drain excess fat if needed.
3. Add onion, garlic, and bell pepper; cook until softened.
4. Stir in tomato paste; cook 1 minute.
5. Add tomatoes, beans, broth, and spices.
6. Bring to a simmer; reduce heat to low.
7. Simmer uncovered 30–40 minutes, stirring occasionally.
8. Adjust seasoning and serve hot.
Notes
Simmer longer for thicker chili.
Mash some beans to naturally thicken.
Adjust spice level to taste.
