Easy Homemade Beef Barley Soup is a hearty classic made with tender beef, pearl barley, and vegetables.
Ingredients
1 tablespoon olive oil
1 1/2 pounds beef chuck, cut into bite-size pieces
1 medium yellow onion, diced
3 carrots, sliced
3 celery stalks, sliced
3 cloves garlic, minced
8 cups beef broth
3/4 cup pearl barley
1 (14.5 oz) can diced tomatoes
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 bay leaf
2 tablespoons fresh parsley, chopped
Instructions
1. Brown beef in olive oil
2. Add onion, carrots, and celery
3. Stir in garlic briefly
4. Add broth, tomatoes, barley, and seasonings
5. Simmer until beef is tender and barley is cooked
6. Remove bay leaf and add parsley
7. Serve warm

Simmer gently for best tenderness.
Add extra broth when reheating.
