Ingredients
4 cod fillets (6 oz each)
1/2 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons olive oil, melted
2 tablespoons fresh parsley, chopped
Lemon wedges for serving
Instructions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper
2. In a small bowl, mix Parmesan, panko, garlic powder, paprika, salt, and black pepper
3. Brush cod fillets lightly with olive oil on both sides
4. Press each fillet into the Parmesan breadcrumb mixture
5. Place coated fillets on the prepared baking sheet
6. Drizzle any remaining olive oil over the tops of the fillets
7. Bake for 12–15 minutes until fish is opaque and crust is golden
8. Garnish with chopped parsley and serve with lemon wedges
