Description
Juicy baked chicken with caramelized sweet potatoes roasted in one pan for a healthy, easy dinner.
Ingredients
4 boneless, skinless chicken breasts
2 large sweet potatoes, peeled and cubed
2 tbsp olive oil
2 garlic cloves, minced
1 tsp paprika
1 tsp dried thyme
1 tsp dried rosemary
Salt and black pepper to taste
Fresh parsley, chopped
Instructions
1. Preheat oven to 400°F (200°C) and grease a baking dish.
2. Toss sweet potatoes with olive oil, garlic, paprika, thyme, rosemary, salt, and pepper; spread in dish.
3. Rub chicken with remaining olive oil, season with salt and pepper, and place on top of potatoes.
4. Bake 25–30 minutes until chicken reaches 165°F and sweet potatoes are tender.
5. Garnish with parsley and serve warm.
Notes
Use chicken thighs instead of breasts if preferred.
Add carrots or red onion for extra veggies.
Drizzle with honey or balsamic glaze before serving.
