Description
Authentic Soup Joumou is a traditional Haitian soup made with tender beef, pumpkin squash, vegetables, and warm spices for a comforting and filling meal.
Ingredients
1½ lb beef stew meat
2 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
2 cloves garlic, minced
1 teaspoon fresh thyme
1 Scotch bonnet pepper, whole
3 cups pumpkin or calabaza squash, cubed
1 carrot, sliced
1 celery stalk, sliced
1 small onion, chopped
1 potato, diced
½ cup cabbage, chopped
½ cup small pasta
6 cups water or beef broth
Instructions
1. Season beef with lime juice, salt, pepper, garlic, and thyme
2. Brown beef in olive oil in a large pot
3. Add pumpkin and 2 cups water and cook until soft
4. Blend pumpkin mixture until smooth and return to pot
5. Add remaining water, vegetables, and whole pepper
6. Simmer for 30 minutes
7. Add pasta and cook until tender
8. Remove pepper and serve
