Description
Asparagus Salad is a light and refreshing salad with crisp asparagus, cherry tomatoes, red onion, and a bright lemon dressing.
Ingredients
1 lb fresh asparagus, trimmed and cut into 2-inch pieces
1 cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons shaved Parmesan cheese
2 tablespoons toasted almonds (optional)
Instructions
1. Blanch asparagus in boiling water for 2–3 minutes
2. Combine asparagus, cherry tomatoes, and red onion in a bowl
3. Whisk olive oil, lemon juice, Dijon mustard, salt, and pepper
4. Pour dressing over salad and toss gently
5. Sprinkle with Parmesan and almonds
6. Serve immediately or chill 15–20 minutes
