Description

This Asparagus Pea Tart is a fresh, elegant spring dish with flaky puff pastry, creamy cheese, tender asparagus, and sweet peas. Perfect for brunch, light dinners, or seasonal gatherings.


Ingredients

1 sheet puff pastry, thawed

1 cup fresh or frozen peas

1 bunch asparagus, trimmed and blanched

1/2 cup ricotta cheese

1/2 cup shredded Parmesan cheese

2 large eggs

1 teaspoon lemon zest

1 teaspoon fresh thyme leaves

Salt and pepper, to taste

1 tablespoon olive oil for brushing

Optional garnish: fresh herbs or microgreens


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Roll out puff pastry and transfer to the lined baking sheet.

3. In a bowl, whisk together ricotta, Parmesan, eggs, lemon zest, thyme, salt, and pepper.

4. Spread the cheese mixture evenly over the puff pastry, leaving a 1-inch border.

5. Arrange peas and asparagus on top of the cheese mixture.

6. Fold edges of pastry over slightly and brush with olive oil.

7. Bake 25–30 minutes until pastry is golden and cheese is set.

8. Cool slightly before slicing.

9. Garnish with fresh herbs or microgreens if desired.

Notes

Blanch asparagus to keep it tender-crisp.

Use goat cheese for a tangy variation.

Add fresh mint or basil for extra flavor.

Sprinkle additional Parmesan on top for a golden finish.

Serve with a light salad for a complete meal.
