Description

These Apple Oatmeal Breakfast Cookies are soft, chewy, and naturally sweetened with apples and a touch of honey. Perfect for busy mornings, lunchboxes, or a healthy snack on the go!


Ingredients

1 cup rolled oats

1/2 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 medium apple (peeled and finely diced)

1/3 cup honey or maple syrup

1/4 cup melted coconut oil or butter

1 egg

1 teaspoon vanilla extract

1/4 cup raisins or chopped nuts (optional)


Instructions

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.

3. In another bowl, whisk egg, honey, melted coconut oil, and vanilla until smooth.

4. Stir the wet ingredients into the dry ingredients until just combined.

5. Fold in diced apple and optional raisins or nuts.

6. Scoop dough onto the baking sheet, flattening slightly.

7. Bake for 12–15 minutes until golden around the edges.

8. Cool on a wire rack before serving.

Notes

Use sweet apples like Honeycrisp, Fuji, or Gala for the best flavor.

Add chia seeds or flaxseeds for extra fiber.

Make them vegan by using a flax egg and maple syrup instead of honey.

Store in an airtight container for up to 4 days, or freeze for up to 2 months.
