Apple Cider Granola

Description

Crunchy homemade granola made with oats, nuts, warm spices, and apple cider for a cozy fall breakfast or snack.


Ingredients

3 cups rolled oats

1 cup chopped pecans or walnuts

1/2 cup unsweetened coconut flakes (optional)

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/3 cup apple cider

1/4 cup honey or maple syrup

1/4 cup coconut oil or olive oil (melted)

1 teaspoon vanilla extract

1/2 cup dried apple chips or diced dried apples


Instructions

1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.

2. In a large bowl, mix oats, nuts, coconut flakes, cinnamon, nutmeg, and salt.

3. In a small saucepan, heat apple cider, honey, and coconut oil until combined. Remove from heat and stir in vanilla.

4. Pour the wet mixture over the dry ingredients and stir until coated.

5. Spread evenly on the baking sheet.

6. Bake for 30–35 minutes, stirring halfway, until golden and fragrant.

7. Cool completely, then stir in dried apples.

8. Store in an airtight container.

Notes

Swap nuts with seeds for a nut-free version.

Use maple syrup for a vegan option.

Press mixture before baking for chunkier granola.
