Description

Soft, chewy almond marzipan cookie bars packed with rich almond flavor and topped with sliced almonds for the perfect finish.


Ingredients

1 cup marzipan, grated

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1/4 cup light brown sugar

2 large eggs

1 teaspoon almond extract

1/2 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/3 cup sliced almonds


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch pan with parchment paper.

2. Grate or finely chop the marzipan.

3. Cream butter, sugar, and marzipan until smooth.

4. Add eggs, almond extract, and vanilla; mix.

5. Add flour, baking powder, and salt; stir.

6. Spread batter into the pan.

7. Top with sliced almonds.

8. Bake for 24–30 minutes until golden.

9. Cool fully before slicing.

Notes

Use almond paste for less sweetness.

Add white chocolate chips for variation.

Dust cooled bars with powdered sugar.

Slight underbaking makes bars chewier.
