Description

Almond Joy Cookies are chewy, chocolatey cookies with coconut, almonds, and chocolate chips, inspired by the classic candy bar.


Ingredients

1 cup unsalted butter, softened

¾ cup brown sugar

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

1 ½ cups sweetened shredded coconut

1 cup chocolate chips

¾ cup chopped almonds


Instructions

1. Preheat oven to 350°F and line baking sheet

2. Cream butter and sugars until light and fluffy

3. Beat in eggs and vanilla

4. Whisk together flour, baking soda, and salt

5. Combine dry and wet ingredients

6. Fold in coconut, chocolate chips, and almonds

7. Scoop dough onto sheet, 2 inches apart

8. Bake 10–12 minutes until edges golden

9. Cool 5 minutes then transfer to wire rack
